ADIHOJA PROJECT
The project consists of executing a pilot test to recover natural extracts that can substitute the nitrates and nitrites currently used in the meat industry, while also identifying which other substances are present in plant-based raw materials, so that through the use of biotechnology and other disruptive technologies encompassed in what is currently known as foodtech, more synthetic compounds currently used in the food sector can be replaced.
In this project, we will evaluate various plant by-products as a possible source of compounds that meet the project’s objective.
This project is supported by ACC10, within the Open and Disruptive Innovation Projects line (2023 call) under the Start-up Development Projects line for pilot testing, with file code ACE105/23/000095, with a budget of €24,968.32 and a grant of the same amount.
