Cette situation souligne la n\u00e9cessit\u00e9 d\u2019une transition prot\u00e9ique, consistant \u00e0 remplacer les prot\u00e9ines animales par des alternatives issues de sources v\u00e9g\u00e9tales, d\u2019algues, de champignons, d\u2019insectes ou de viande de culture. L\u2019un des d\u00e9fis majeurs r\u00e9side dans la variabilit\u00e9 de la qualit\u00e9 nutritionnelle des prot\u00e9ines alternatives, r\u00e9sultant des processus d\u2019extraction et de la source d\u2019origine, particuli\u00e8rement lors d\u2019\u00e9tapes critiques de la vie telles que la croissance et le vieillissement.<\/p>\n<p style=\"text-align: justify;\">Le projet SAN-PROT s\u2019attaque \u00e0 ce probl\u00e8me en d\u00e9veloppant de nouvelles sources de prot\u00e9ines alternatives d\u00e9riv\u00e9es de sous-produits agricoles, tels que le grignon d\u2019olive, contribuant ainsi \u00e0 la durabilit\u00e9 environnementale. De plus, il propose une approche multidisciplinaire, en collaborant avec diverses entit\u00e9s pour garantir des solutions innovantes optimisant les ressources existantes. Le projet vise \u00e9galement \u00e0 r\u00e9duire la d\u00e9pendance au soja comme source de prot\u00e9ines dans l\u2019alimentation animale, am\u00e9liorant ainsi la durabilit\u00e9 de la production animale. La garantie de la qualit\u00e9 nutritionnelle sera une priorit\u00e9, avec une \u00e9valuation sp\u00e9cifique des produits destin\u00e9s aux consommateurs lors des phases critiques de leur vie.<\/p>\n<p style=\"text-align: justify;\">L\u2019objectif principal de SAN-PROT est de valoriser le r\u00e9sidu de l\u2019extraction de l\u2019huile d\u2019olive, appel\u00e9 grignon, comme nouvelle source de prot\u00e9ines pour diverses applications.
