Ces derni\u00e8res ann\u00e9es, la recherche d\u2019aliments sains et nutritifs a fait monter en fl\u00e8che la demande de prot\u00e9ines d\u2019origine v\u00e9g\u00e9tale. Selon les derni\u00e8res pr\u00e9visions, d\u2019ici 2035, la consommation de produits transform\u00e9s \u00e0 base de prot\u00e9ines v\u00e9g\u00e9tales augmentera de plus de 14 %, passant de 13 millions de tonnes m\u00e9triques en 2020 \u00e0 environ 100 (Statista, d\u00e9c. 2021).  <\/p>\n<p>Dans ce sc\u00e9nario, le Cluster FOOD+i a promu la cr\u00e9ation d\u2019un consortium compos\u00e9 de huit entreprises espagnoles qui se distinguent par leur parcours dans le domaine de l\u2019innovation au sein du secteur de l\u2019alimentation et des boissons. Celles-ci sont d\u00e9termin\u00e9es \u00e0 collaborer pour relever le d\u00e9fi de trouver de nouvelles sources de prot\u00e9ines v\u00e9g\u00e9tales appel\u00e9es \u00e0 compl\u00e9ter l\u2019offre des sources les plus utilis\u00e9es aujourd\u2019hui par le secteur, comme la prot\u00e9ine de soja. Ces nouvelles sources de prot\u00e9ines v\u00e9g\u00e9tales permettront de diversifier le r\u00e9gime alimentaire, d\u2019apporter d\u2019autres nutriments et d\u2019offrir plus de vari\u00e9t\u00e9 et de saveur aux repas. <\/p>\n<p>Parmi les plantes faisant l\u2019objet de l\u2019\u00e9tude figurent le brocoli, les choux de Bruxelles, le chou, le chou-fleur, les navets, le chou vert, le chou commun, le moringa, la caroube, le lupin doux (dont on extrait le lupin), le souchet, les f\u00e8ves et diff\u00e9rents champignons.<\/p>\n<p>Les entreprises impliqu\u00e9es dans le projet CRESCERE cherchent \u00e0 accro\u00eetre la valeur ajout\u00e9e de plantes \u00e0 haute valeur nutritionnelle et chimiopr\u00e9ventive gr\u00e2ce au d\u00e9veloppement de nouveaux usages et applications.<\/p>\n<p><strong>Un projet financ\u00e9 par le <\/strong><a href=\"https:\/\/www.cdti.es\/index.asp\"><strong>CDTI<\/strong><\/a><strong> dans le cadre de son exigeant appel \u00e0 projets strat\u00e9giques CIEN<\/strong> et align\u00e9 sur la strat\u00e9gie europ\u00e9enne <em>Farm-to-Fork <\/em>(De la ferme \u00e0 la table) qui poursuit la durabilit\u00e9 et l\u2019\u00e9conomie circulaire de la cha\u00eene alimentaire dans la production de prot\u00e9ines \u00e0 haute valeur nutritive \u00e0 partir de v\u00e9g\u00e9taux (<em>plant<\/em> <em>based<\/em>).<\/p>\n<p>[\/et_pb_text][et_pb_image src=\u00a0\u00bbhttps:\/\/ingredalia.net\/wp-content\/uploads\/2022\/09\/Img-proyecto-CRESCERE-v3.webp\u00a0\u00bb alt=\u00a0\u00bbImg projet CRESCERE v3&Prime; title_text=\u00a0\u00bbImg projet CRESCERE v3&Prime; _builder_version=\u00a0\u00bb4.22.1&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb hover_enabled=\u00a0\u00bb0&Prime; border_width_all=\u00a0\u00bb3px\u00a0\u00bb border_color_all=\u00a0\u00bb#d3d3d3&Prime; global_colors_info=\u00a0\u00bb{}\u00a0\u00bb theme_builder_area=\u00a0\u00bbpost_content\u00a0\u00bb sticky_enabled=\u00a0\u00bb0&Prime;][\/et_pb_image][et_pb_text _builder_version=\u00a0\u00bb4.22.1&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb text_orientation=\u00a0\u00bbjustified\u00a0\u00bb global_colors_info=\u00a0\u00bb{}\u00a0\u00bb theme_builder_area=\u00a0\u00bbpost_content\u00a0\u00bb]<\/p>\n<p>L\u2019\u00e9quipe de recherche compos\u00e9e de scientifiques et de techniciens des entreprises <a href=\"https:\/\/kimitec.com\/\">Kimitec<\/a>, <a href=\"https:\/\/www.carinsa.com\/\">Carinsa<\/a>, <a href=\"https:\/\/www.ingredalia.com\/es\/es\/\">Ingredalia<\/a>, <a href=\"https:\/\/interal.es\/\">Interal<\/a>, <a href=\"https:\/\/zyrcularfoods.com\/\">Zyrcular Foods<\/a>, <a href=\"https:\/\/www.delafruit.com\/\">Delafruit<\/a>, <a href=\"https:\/\/www.domusvi.es\/\">DomusVi<\/a> et <a href=\"https:\/\/tecnopackaging.com\/\">Tecnopackaging<\/a> s\u2019est r\u00e9unie sous un mod\u00e8le bas\u00e9 sur la recherche ouverte (<em>Open Innovation)<\/em> qui leur permettra de se compl\u00e9ter pour le d\u00e9veloppement de nouveaux produits bas\u00e9s sur les prot\u00e9ines v\u00e9g\u00e9tales.<\/p>\n<p>Pour r\u00e9aliser un saut qualitatif et quantitatif dans les domaines technologiques abord\u00e9s par le projet CRESCERE, les entreprises b\u00e9n\u00e9ficient de la collaboration des organismes de recherche suivants : <a href=\"http:\/\/ctic-cita.es\/\">CTIC CITA<\/a>, <a href=\"https:\/\/www.tecnalia.com\/\">FUNDACION TECNALIA<\/a>, <a href=\"https:\/\/www.aitiip.com\/\">AITIIP<\/a>, <a href=\"https:\/\/www.fundacioncajamar.es\/es\/comun\/\">FUNDACI\u00d3N CAJAMAR<\/a> et l\u2019<a href=\"https:\/\/www.uvigo.gal\/es\">Universit\u00e9 de Vigo<\/a>.<\/p>\n<p><strong>KIMITEC<\/strong>, qui est \u00e9galement le coordinateur technique du projet, s\u2019occupera de la mise \u00e0 l\u2019\u00e9chelle, ainsi que de l\u2019obtention et de la caract\u00e9risation de nouveaux ingr\u00e9dients.<\/p>\n<p>En ce sens, KIMITEC s\u2019impliquera \u00e9galement dans l\u2019am\u00e9lioration de l\u2019apport prot\u00e9ique et des microprot\u00e9ines pr\u00e9sentes dans les cultures v\u00e9g\u00e9tales cibles gr\u00e2ce \u00e0 l\u2019utilisation de biostimulants et de probiotiques, ce qui am\u00e9liorera les propri\u00e9t\u00e9s organoleptiques, chimiopr\u00e9ventives et nutritionnelles des produits alimentaires d\u00e8s l\u2019origine.<\/p>\n<p><strong>INGREDALIA<\/strong>, entreprise biotechnologique de Navarre qui d\u00e9veloppe, fabrique et commercialise des ingr\u00e9dients fonctionnels naturels pour l\u2019industrie \u00e0 partir de sous-produits v\u00e9g\u00e9taux, se concentrera sur la recherche de voies d\u2019obtention de la fraction prot\u00e9ique et des compos\u00e9s d\u2019int\u00e9r\u00eat \u00e0 l\u2019\u00e9chelle du laboratoire. Elle b\u00e9n\u00e9ficiera du soutien de <strong>CARINSA<\/strong>, qui dirigera la recherche pour l\u2019obtention de pr\u00e9parations prot\u00e9iques adapt\u00e9es \u00e0 leur application et les \u00e9tudes de stabilit\u00e9. <\/p>\n<p>Pour garantir l\u2019utilisation de ces ingr\u00e9dients dans le secteur des produits alimentaires transform\u00e9s, CRESCERE compte sur des entreprises de transformation : <strong>INTERAL<\/strong>, <strong>DOMUSVI<\/strong>, <strong>DELAFRUIT<\/strong> et <strong>ZYRCULAR<\/strong>, qui \u00e9tudieront les technologies et les processus pour la formulation de multiples matrices avec les ingr\u00e9dients du projet.
