La pr\u00e9valence dans les pays occidentaux se situe autour de 1 % de la population. En Espagne, cette pr\u00e9valence s\u2019observe \u00e0 hauteur de 1\/71 dans la population infantile et de 1\/137 dans la population adulte. On estime qu\u2019en Espagne, pr\u00e8s d\u2019un demi-million de personnes pourraient \u00eatre concern\u00e9es, bien que 70 % d\u2019entre elles ne soient pas diagnostiqu\u00e9es.<\/p>\n<p>Dans la Communaut\u00e9 forale de Navarre, avec une population de 674\u202f796 habitants, environ 10 % de la population suit un r\u00e9gime sans gluten. Par cons\u00e9quent, 70\u202f000 personnes adoptent un mode de vie o\u00f9 trouver des aliments sains, sans gluten, est assez compliqu\u00e9 (jusqu\u2019\u00e0 80 % des produits sans gluten actuellement sur le march\u00e9 sont class\u00e9s comme malsains).<\/p>\n<p>Ces derni\u00e8res ann\u00e9es, le march\u00e9 des produits sans gluten est en hausse. Selon une \u00e9tude de Mintel, l\u2019Espagne est le troisi\u00e8me pays au monde \u00e0 lancer le plus de produits sans gluten, derri\u00e8re le Br\u00e9sil et les \u00c9tats-Unis. Il reste toutefois difficile de trouver des r\u00e9f\u00e9rences de produits sans gluten pr\u00e9sentant un profil nutritionnel ad\u00e9quat, ainsi que de bonnes caract\u00e9ristiques organoleptiques. Il est donc n\u00e9cessaire de promouvoir la recherche afin de progresser dans l\u2019obtention d\u2019ingr\u00e9dients garantissant un profil nutritionnel ad\u00e9quat dans les produits sans gluten.<\/p>\n<p>En Navarre, un total de 100\u202f000 t de sous-produits v\u00e9g\u00e9taux est g\u00e9n\u00e9r\u00e9 chaque ann\u00e9e. 16 % de ces d\u00e9chets correspondent \u00e0 9\u202f000 t d\u2019artichaut et 7\u202f000 t de cardon. Par ailleurs, la paille de bl\u00e9 est consid\u00e9r\u00e9e comme le sous-produit agricole au plus fort potentiel dans l\u2019UE, en raison de sa composition, de son abondance et de son faible niveau d\u2019exploitation. Selon des donn\u00e9es de la Commission europ\u00e9enne, environ 144 MTn de paille de bl\u00e9 s\u2019accumulent chaque ann\u00e9e en Europe. Ainsi, la valorisation de ces sous-produits est envisag\u00e9e comme une opportunit\u00e9 : d\u2019une part, elle facilite leur gestion et, d\u2019autre part, elle permet d\u2019obtenir de nouveaux ingr\u00e9dients aux propri\u00e9t\u00e9s b\u00e9n\u00e9fiques pour la sant\u00e9.<\/p>\n<p>Dans ce cadre, le projet <a href=\"https:\/\/www.clusterfoodmasi.es\/proyecto\/by-wheat\/\"><strong>By-Wheat<\/strong><\/a> voit le jour. Son objectif est de d\u00e9velopper des farines de bl\u00e9 sans gluten pour des produits sains, en garantissant leur qualit\u00e9 et leur s\u00e9curit\u00e9 alimentaire, en utilisant des agents pr\u00e9biotiques ainsi que des ingr\u00e9dients antioxydants et protecteurs, et en int\u00e9grant des sous-produits de l\u2019industrie agraria du bl\u00e9, du cardon et de l\u2019artichaut. \u00c0 cet effet, un consortium d\u2019entreprises a \u00e9t\u00e9 constitu\u00e9, pilot\u00e9 par <a href=\"https:\/\/www.breadfree.es\/es\/\">Bread Free<\/a>, et auquel participent <a href=\"https:\/\/ingredalia.net\/fr\/\">Ingredalia<\/a> et <a href=\"https:\/\/biopalacinplanet.com\/\">BioPalacin Planet<\/a>, ainsi que le <a href=\"https:\/\/www.clusterfoodmasi.es\/\">Cluster agroalimentaire de la vall\u00e9e de l\u2019\u00c8bre, FOOD+<\/a>i, et la <a href=\"https:\/\/aragoninvestiga.es\/portfolio\/fundacion-parque-cientifico-tecnologico-aula-dei\/\">Fondation pour l\u2019innovation et le transfert agroalimentaire d\u2019Aragon<\/a>, FITA.<\/p>\n<p>Tout au long du projet, des farines de c\u00e9r\u00e9ales biologiques sans gluten, avec un profil nutritionnel adapt\u00e9 au consommateur final, seront d\u00e9velopp\u00e9es. De m\u00eame, des ingr\u00e9dients pr\u00e9biotiques \u00e0 partir de bl\u00e9 seront d\u00e9velopp\u00e9s, et l\u2019impact de leur ajout \u00e0 des produits sans gluten sera \u00e9valu\u00e9.
